FRIDAY, or does Friday even matter anymore? I can’t decide.
Anyway, I almost feel silly sharing this easy carbonara sauce recipe because it’s SO simple! But it’s also DELICIOUS and we ALL need easy and delicious right now, am I right? When Aaron and I went on our honeymoon in Italy, we fell in love with Carbonara and have since been ordering it wherever we go, but I had yet to make it in our own home. So, a few weeks ago, I decided to try and reproduce the meal and while it’s not quite Italy goos (is anything, really?), it’s good enough to want weekly. 🙂 Oh, and also SO easy.
Easy Carbonara Sauce
Here is what you need:
-4 eggs
-pasta noodles (we used what we had, regular spaghetti noodles, but you could use whatever you like)
-Parmesan cheese (1 bag)
-salt and pepper
-parsley
-protein of choice (True carbonara has pancetta, but we used chicken and bacon because we had them on hand).
Here is what you do:Â
- First, cook your protein (if using) to liking. I cooked the chicken with the bacon and the flavoring was delicious. Use salt and pepper as desired. Put aside once complete.
- Boil pasta in a pot and cook al dente.
- While pasta is cooking, in separate bowl mix four eggs with bag of Parmesan cheese, salt and pepper. Whisk until combined. Set aside.
- Drain pasta and reserve one cup of pasta water.
- After pasta has been drained, while still hot, mix in protein and then pour egg/cheese mixture into pasta. Mix until blended and use pasta water sparingly until desired creaminess is achieved.
- Top with parsley, cheese and pepper.
- Enjoy!
SO EASY and so good. Dinner was done in about 15 minutes and we all went in for seconds. Even Penelope enjoyed it!
