Low Calorie Blueberry Drop Scones and Bigelow Tea

Since starting my new job, I’ve really been making a conscience effort to prepare meals for the workday. My last office had a cafeteria, so I was guilty of getting breakfast, lunch and snacks down there almost everyday.  While my new office has a cafeteria, it’s quite further and I obviously haven’t made any cafeteria buddies over the course of a week, so going three times a day might get a little lonely. Along with trying to save money by not buying food, I’ve also been trying to eat a little healthier. I love pastries and baked goods just as much as the next gal, but what I don’t love is what they do to my clothes fitting. A pastry and a cup of Vanilla Bigelow? Yes please (as my pants scream NO!). However, these drop scones are the perfect balance at about 120 calories each- I can have my scone and literally eat it too. Plus, it all falls under that whole, “learning to bake” situation I talked about on my new year’s resolution list (which I’m just starting in August…makes sense, right?).

I literally grabbed this recipe from here and made a few small adjustments. I made my drops slightly bigger (about double the recommended), added about 2 cups of blueberries instead of one and I also decided to use solely wheat flour as opposed to a mix of white and wheat. My husband and I both thought they turned out great (we had one for dessert after dinner with some family owned Bigelow and it was the perfect way to spend the evening reading and blogging on the couch).

Make sure you check out Walmart’s selection of Bigelow. So many flavors and all so delicious (especially with scones!) Another thing I love about Bigelow sends tea to our troops through the Tea for Troops program. Additionally, Bigelow’s tea garden is in Charleston and I am hoping during our time here in NC that we will be able to visit. I have been to plenty of vineyards, but never a tea garden and I think it would be really neat to visit! Has anyone ever been?
