- 2 eggs per plate
- Large Avocado
- Goat Cheese
- El Yucateco Hot Sauces
- Tortillas
- Fresh Cilantro
- Black Beans (1 can)
- Sour Cream
- Lime
- Salt and Pepper to taste
- Jalapenos (optional)
I make my eggs over medium and then literally just pile the ingredients on top of the tortillas. You can use whatever you want. I then put out some extra “kicks” like the hot sauces. I tend to shy away from SUPER spicy, but my husband loves it. I picked these sauces up at Lowes Foods, you can find them in the International area where the other sauces are. El Yucateco Red Hot Sauce is my favorite and the least spicy of the three, if I use the others (El Yucateco Green Hot Sauce or El Yucateco Chipotle Sauce) I need to be prepared with LOTS of H2O. 🙂
Again, any of these are optional. We’ve made them with zucchini before, shredded American cheese, tortilla chips instead of flour tortillas. We literally clean out the fridge and just use what we have! It’s perfect for those end of the week (or beginning) of the week meals when you just don’t feel like cooking but can’t stand the thought of another frozen dinner or take out box!
