Goat Cheese Flatbread

You know those quick and easy dinners that are SO easy to make, yet taste so good? That’s what this little gem is. After discovering my love affair with goat cheese, my girlfriend Misti passed this recipe along to me and it has been on repeat ever since. Hot, cold, leftover, as a snack…you name it- I love it. I’ve tried lots of different varieties of veggies and have even added chicken- every time, it’s pretty darn yummy. Oh, and did I mention easy?

Here’s what you need:

1. Pizza crust: I usually buy a Boboli wheat thin crust, but for this particular go around, I just used a Pillsbury Wheat thin crust. 
2. Veggies of your choosing. I used squash and fresh basil.
3. A log of goat cheese. 
4. One lemon. 
5. Salt and Pepper to taste. 

#1:
Clean and chop veggies. 

#2: 
In a small bowl slightly microwave cheese log until softened. Add juice of one lemon to cheese and mix. Take pre-baked crust and spread cheese mixture along the surface. 

#3. 
Spread desired veggies out on cheese mixture. Sprinkle with fresh herbs, salt and pepper and bake at 350 degrees for 10-15 minutes (or until desired browning is reached). Take our of oven and serve! Voila, easy as pie (pizza pie that is!)

Not a fan of goat cheese? Substitute something else!

    Oh my goodness, that looks delicious and IS easy! I love recipes that don't call for a lot of ingredients :). We are also making pizza from scratch tonight, only ours will have have ground beef and veggies on it. Saving this for the future!
