My husband will tell you, I am NOT a fan of leftovers. Rarely do I eat them and if I do, it has to be the very next day (or later that day). We had a fajita night with friends a week or so ago and had TONS of leftovers (better to have too much than not enough I always say) and of course, in order to keep the grocery bill down for the week, my husband suggested leftovers. YUCK. Not that I didn’t listen to that cute lil’ guy, I just got creative (Note:you don’t have to have leftovers for this, but we already had the beans, peppers the guac).
We love Mexican food in our house and eat it about once a week, buuutttt…we also love pizza. So, you can pretty much imagine how smart I felt when I thought of putting the two together. I didn’t really follow any recipe, I just improvised. The only thing a pizza needs to have is cheese, toppings and more cheese. Done and done.
…………………………………….Here is what you need………………………………..
1. Pizza Crust (I bought a whole wheat one)
2. Toppings: I used peppers, refried black beans, cheese, salsa, cilantro, lettuce, taco seasoning, meat (if you want), and some other misc.
3. Chips and salsa and even possibly a great margarita or Mexican beer

1. Preheat oven
2. Brown meat and add taco seasoning (I only add about 1/2 of the package and we use ground turkey)
3. Layer on toppings. Do not add lettuce, cilantro or anything else that will not be good heated.
4. Prepare cold toppings (i.e. lettuce, sour cream, fresh cilantro, salsa)
5. Bake pizza at 350 degrees until cheese is melted and browning.
6. Grab some chips, slice pizza once cool. Top with sour cream, guac, lettuce, cilantro and serve. Yummy!

It's always the opposite in our household. I'll eat every last bite of something while my husband refuses to ever eat leftovers, except if I can manage to re-imagine them somehow like this. It looks fabulous!

Brett and I make pizza all the time… next time try Trader Joes' raw pizza dough, about $2 and found in the cheese section typically. So delicious and with a pizza stone, your pizza will taste even better than a pizza shop!
