The shelf life of a butternut squash is fairly long I learned recently. Aaron and I had went to the Farmer’s market where I proceeded to buy three squashes with the purpose of making homemade soup. Three weeks later, they were still good. I adapted my recipe from here, but I substituted some ingredients and didn’t make the same crostini- however, it was still delicious. Never underestimate the power of a food processor (or blender).
This is definitely a must try for fall, it has the consistency of apple sauce, but it is creamy and flavorful. I used broth instead of chicken stock, didn’t use the carrot and I used dried sage instead of fresh. Even with the changes, it was still great and I already have some packed in my lunchbox for tomorrow’s lunch. As for the crostini, I didn’t have the right cheese, so I just sprinkled what I had on hand and also added some pine nuts, easy peasy!
Seriously, so good. Add some chives and a little sour cream and it’s ready to go (and filling too!). If you need meat in your dishes, Im sure some bacon would be delish sprinkled on top as well!

Butternut squash is lovely roasted/baked. I've seen many people stuff them with wild rice, cranberries, and other sweet/savory things. They're also lovely just cubed and baked with rosemary and some salt.
