This past Monday, we went over to a friends for a small Memorial Day BBQ. Since I was extremely tired from celebrating my girlfriends Bachelorette Party all weekend, I knew I needed to throw something simple and yet still delicious together. Enter this salad. It’s easy, holds up well and we thankfully had leftovers that I’ve been carrying to work with me all weekend.
Here is what you need:
- Cucumbers (I spoon the seeds out. This helps keep the salad from getting too soggy and watery. I take a spoon and simply strip the seeds into the trash)
- Feta cheese
- Cherry tomatoes
- Red onion
- Salt and Pepper
- Red Wine Vinegar
- Olive Oil
Simply chop up your ingredients, splash them with Olive Oil / Red Wine Vinegar and salt and pepper to taste and ta-da! Instant salad. If you have time to refrigerate before serving it’s even better. Super easy and the perfect snack or dish to take to all of those summertime gatherings!
