My friend made this yummy salad for one of her gatherings that basically had Aaron hooked. Come to think of it, everything she has cooked for us has been delicious (I think it’s a born skill to be a good cook if you’re form the South and she is). Midwest people being good cooks? It’s a crap shoot. I’d like to think I’m getting there…
Anyway, I texted her one day to find out the recipe and I also quickly learned that southern women don’t measure- it’s all, “do it to taste” or “do it to your liking.” I like that, which is probably why I’m NOT a baker because baking is an exact, not an estimate…another topic for another day. Well, during my little do-what-I-like session, I started second guessing myself and started googling similar recipes online and popped upon this little gem. I love Ina, and hers is quite similar, but I love that my girlfriends has arugula because I think it adds a little something extra. Also, my girlfriend’s doesn’t use the pine nuts or green onions and uses her own lemon/Dijon vinaigrette- but I always think a recipe with a few variation is the best kind so you can keep people guessing! Anyway- we took it to a BBQ and everyone loved it, so naturally I had to share. It’s easy, delicious and leftovers are equally just amazing. I believe we ate this for the next two days and didn’t complain once. It was actually a little sad once it was gone.
Everything my girlfriend has made for us has been amazing, so hopefully she keeps inviting us over for the yumminess that happens in her kitchen- well that and the good conversation of course!
