Lately, my husband has been on a kick to incorporate more vegetarian dishes into our diet. I must admit, I could give up red meat easily, but I do have a hard time when it comes to grilled chicken. I have however started experimenting more with non meat dishes and it’s been fun! While this isn’t a meal, it is a delicious side dish or mid afternoon snack to satisfy those 2pm cravings! I love anything with cilantro in it and I bet you could also stuff this is a tortilla shell and it would be just as yummy!
I picked the recipe up from Oh She Glows which is a vegan blog with tons of delicious looking recipes. While Aaron and I wont be trying a vegan lifestyle anytime soon, I am happy to report almost every vegetarian meals we’ve made has been delicious…that husband of mine may be on to something!
