With Thanksgiving right around the corner, I’ve been experimenting with some items I’d like to try and make for dinner. I came across an idea to make mini pies, but then took that idea a little more to the extreme and decided to make phyllo bite sized pies! These will be perfect for an upcoming holiday potluck I have at work and would even be adorable as an appetizer leading up to dinner! They were super easy and actually took a fraction of the time a pumpkin pie would take since baking time is a short 15 minutes as opposed to an hour. Oh, and I added chocolate chips, because I am a huge believer that everything is better with some Nestle chocolate chips!
The only recipe I followed was the legit recipe for a pumpkin pie (I found it on the back of a Libby’s canned pumpkin). I did change crust to phyllo cups (I am a HUGE advocate for these little guys- you can pick them up in the frozen dough area of your local Walmart store).
Here is what you Need:
- Sugar, 3/4 cup
- Carnation Evaoprated Milk, 1 can
- Nestly Chocolate Chips, 1/2 cup
- Pumpkin Pie Spice, 1 tbl
- 2 eggs
- Salt, 1/2 tsp
- Phyllo cups, as many as you’d like to make
Basically follow all instruction for pie filling (aka blend everything together) and then scoop into cups. This is probably enough to make 48 cups worth, so I would recommend halving the ingredients to make less. Bake for about 15 minutes (or until poke in pie filling comes clean). Top with whipped cream and voila, mini pies!
