Two weeks ago, Aaron and I went to a little fall gathering at our friend’s place. She sent us home with a little goodie bag filled with toffee and muffins and ever since, my husband has been talking about said muffins. I figured that was good enough reason to ask for the recipe and permission to post it, so here it is. I did change a few ingredients to use what we had on hand (wheat flour as opposed to white and our Pure Via as opposed to regular sugar). However, even with these small changes, they were delicious and I’d like to think a little healthier too!
Here is what you need:
- 1/2 cup sliced almonds (toast for 5-10 minutes at 350 degrees). I actually skipped this step and they still taste great!
- 1 cup Pure Via – we love this stuff since it’s an alternative to sugar and artificial sweetener. We get ours at Walmart- you can search retailers on their website. Plus, it’s all natural which is great!
- 1 1/3 cup flour (I used wheat)
- 6 oz. mini chocolate chips
- 2 eggs
- 1/2 cup butter, melted
- 1 tbl. pumpkin pie spice
- 1 tsp. baking soda
- 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1/2 lb pumpkin (half can)
Mix all dry ingredients and then stir in wet ingredients. Put into greased muffin cups and bake at 350 degrees for 20-25 minutes. Easy! Delicious!

**Paleo Pumpkin Cake Recipe
For the Pumpkin Cake
1 c pumpkin puréed
1 c almond butter
1/2 c honey
2 eggs
1 1/2 t baking powder
1/2 t baking soda
1 t vanilla extract
2t cinnamon
1/2 t nutmeg
1/2t cloves
1/3 cup enjoy life chocolate chips or dark chocolate chips
I have never made the icing-
For the Cinnamon Icing
1/4 c coconut butter
1/4 c coconut oil
1/4 c honey
1 t cinnamon
The How-To
For the Pumpkin Cake
Preheat your oven to 350F.
In a medium sized bowl, combine all the cake ingredients and mix thoroughly to combine. Pour into an 8×8 oven safe baking dish (I suspect you could squeeze 12 cupcakes out of this recipe if you use a muffin tin). Bake until completely cooked through, about 23-25minutes.
