Are you all swimming in leftovers stuck in your fridge from the holiday? Yes, me too. Mostly turkey- but there are a few other things in there too- pie anyone? I will be using this site to help with the turkey problem. Anyway, we also had a ton of ham left over on Friday, but thanks to my Mother in Law’s quick thinking, we were able to use the last of the ham in a delicious quiche. I had everything on hand from Thanksgiving except for cheese, so I drove down to the closest grocery store (Walmart) to pick up some Kraft shredded cheese and off we went quiche making. We kind of improvised as we went, but it turned out to be a delicious, buttery ham quiche that we all quickly gobbled up quickly.
Anne’s Quiche with Biscuit Top
For 1 10-inch deep dish pie
Filling:

6-8 eggs
1 12 oz. pkg Kraft shredded cheese (your choice of flavor, I use the cheddar or cheddar mix)
1/2 cup milk or cream
Salt to taste (1/2 tsp)
Pepper to taste (1/2 tsp)
Optional filling ingredients

1 cup diced ham
1/4 cup diced white or yellow onion
A few slices diced cooked bacon
(You can add whatever you want, including veggies)
Biscuit Crust for 1 Deep Dish Pie (if you are on a diet you can omit the entire crust if desired.)

1 1/8 c biscuit mix
Approximately 1/3 c milk or cream
1. Crack eggs and add to large mixing bowl
-Add milk, salt and pepper and mix with whisk or electric beater or fork until creamy but don’t overmix
2. And all filling ingredients and mix gently.
-Spray pie dish with Pam or other cooking spray.
-Add filling to deep dish pan. Cover with crust (below)
3. Directions-Crust: (crust is optional.)

-Mix Biscuit and milk to form a dough. If dough is too sticky add a little bit more biscuit mix, if dough is too dry add a little bit more milk.
-Turn the entire dough out onto a floured board and roll out to approximately the size of the top of the deep dish.
-Place over the deep dish filling. Cut holes in the top if you wish.
-Brush top of crust with melted butter or oil if desired.
4. Bake at 400° for approximately 20 minutes. Knife inserted into the filling will come out clean when done.
