Yesterday I volunteered with the Junior League to write Christmas cards to the nursing homes in our area and since I believe you can never go to someone’s home without taking something I whipped up some cookies before heading over. I love S’mores during the summer, so yesterday, I thought- hey, I recently picked up Honey Maid Graham crackers (for snacking) and I had marshmallows from Thanksgiving on hand- so what else did I need? I ran to Walmart to grab the last ingredients and a cookie was born.
I used this recipe, but added more marshmallows (duh) and more chocolate chips. I also added 6 Graham Crackers instead of 4 (because that’s practically the main event, no?) and just crushed them up in the Kitchen Aid mixer with everything else.
While they were cooking, I tried to make a mini Honey Maid house with Skippy Peanut Butter with Aaron. Instead of icing to assemble, we used Skippy Peanut Butter and let me just say, while the house wasn’t so pretty- it sure was delicious! We then topped the roof with icing and little gumballs- we may have eaten the house before the cookies we’re done! Building a little gingerbread house is much harder than I expected, but fun nonetheless!
Why do weekends come and go so quickly? It’s so sad and makes me crave the holiday break even more! However, to hold me over until then, Ill just be eating these delicious cookies!
p.s. my appetizer plates are here from C.Wonder
