We honestly don’t keep a ton of candy in our house. I would gobble it up in an instant if I did. But this past weekend, we were collecting the necessities at Sam’s Club, when Aaron spotted the most giant bag of Skittles I’ve ever seen. I knew instantly, the rainbow treat was coming home with us and wouldn’t last long despite being a huge bag! My husband is a skittle-aholic!
I decided to get creative for a cookout we headed to this evening. I was in charge of dessert, so I did what any baker would do (went on Google). I used this recipe and can we say simple and awesome? I honestly had never made meringues before and I was AMAZED by how easy and amazing eggs+sugar are when whipped together for a period of time!
I took them to the grill out and they were a huge hit. Since Aaron is on nights, he took a baggy full of regular Skittles to pop throughout the night. I can picture him now chatting about his predictions for the upcoming Basketball Tournaments and popping Skittles in between patients!
In all honesty, these are such a treat and different type of dessert from cookies or brownies. I knew everyone was a bit hesitant while trying them, but they were a huge success! Plus, now I am on the hunt for an amazing macaroon recipe for next weekend since this meringue recipe was a success!
Oh, and I forgot, the Skittles add a bit of flavor to the meringue, so depending on your combo, you could have lemon, lime, etc!
