Lately, I’ve been seeing far too many tropical looking beverages pop up on my news feed. It’s depressing. Not only do I want a tropical beverage, but I want a tropical vacation, stat. Sadly, I don’t have one coming up. And while I am more than willing to pop down to a local pub and ask for a deliciously whipped Pina Colada, it’s just not the same. Also, I’m not willing to sacrifice those kind of calories unless I’m sitting poolside in a cabana. But I was excited to team up with Pinnacle Vodka today to share that what I am willing to do however, is find a lower calorie option that I can make at home and at least pretend I’m on the beach somewhere. Luckily, with all of Pinacle Vodka’s delicious flavors, it’s easy to make your favorite island beverage right in your own kitchen. Pineapple Paradise
Here is what you need:
1 1/4 oz Pineapple Pinnacle Vodka
1/2 oz coconut milk (I used low fat)
1 oz sparkling water (I used coconut flavored La Croix)
Ice
Mix all ingredients
Shake vigorously
Strain into a chilled highball glass
Add a splash of grenadine or cherry juice if desired (I did, which gives pink tint)
Garnish with tropical things (i.e. cheeries, pineapple wedge, little umbrella)
Sit back and pretend the cabana boy is checking you out
I love anything coconut or pineapple flavored, so I actually just kind of made this up. We always have coconut La Croix at our house. My husband likes it, but it definitely isn’t his favorite flavor. I on the other hand, think it’s amazing! I can only find that flavor at Target too! Have y’all seen it anywhere else?
Looking back, Coconut Pinnacle Vodka would have also been amazing in this drink! I’m making a mental note for next time and if anyone tries it before then, let me know how it is!
