I am always looking for healthy, but filling breakfast ideas. I wish I had the time to scramble myself eggs every morning, but I can’t get up earlier than I already do. This coffee cake is delicious and healthy (only about 250 calories per serving). I love pairing it with my Nestle Carnation Breakfast Essentials shake mix. I feel like I’m drinking chocolate milk and having cake (but I’m actually just eating a healthy breakfast). Mind trick! 

I picked up all of the healthy essentials for this at our local Kroger and whipped this together for the week in about an hour. It’s a perfect breakfast option because you can keep it for the week, pop it in the microwave in the morning and enjoy!

I used this recipe, but changed up a few items. I choose to use greek yogurt instead of regular and also used wheat flour. I also eat mine with a dollop of whipped cream (because duh!). Oh and I paired it with my Nestle Breakfast Essentials to ensure I was full and satisfied! You can locate Nestle Breakfast Essentials in the cereal aisle by the instant oatmeal and near the granola bars!
