About a week ago, I picked up some ginger root for a dinner recipe I was making. During the summer I love trying new recipes, but often I’ll need ingredients that I typically wouldn’t use otherwise. So, when I still had half a ginger root left, I started perusing the internet to see what I could find. Side note: when Aaron and I first got our juicer, I threw about 1/2 a ginger root in- WOW what a mistake. I didn’t realize it literally needed a pinch and it burned going down!
Anyway, I stumbled upon a ginger lemonade recipe and had everything it called for (which isn’t much). I made a few tweaks, but this turned out delicious. It was a prefect summer weeknight drink and I had one waiting for Aaron when he walked through the door (wife of the year award?). His first response, “is there alcohol in this?” UM, no- but you could add some (that is a GREAT idea for a weekend drink!).
Ingredients
- 1/3 cup fresh ginger, cut into thin disks (I did not peel mine)
- 1/4 cup honey (I bet you could substitute for sugar)
- 1 cup cup fresh lemon juice (from about 4 large lemons or 6 small lemons)
- 4-5 cups water depending on how strong you’d like it (You can also add more water later for a bigger batch)
- 1/8 cup fresh mint (half chopped finely and half for garnish)
1. Bring 2 cups cold water to a boil, then pour it into the bowl containing ginger, honey and mint. Let soak for 10 minutes.
2. Strain the concentrate into glasses or a pitcher. Garnish with mint and enjoy!
**You can add additional honey for sweetness or cold water if the ginger is too strong.
