During the winter months, I use my crockpot at least once a week. I love that I can literally throw things in, turn it on low and by the time I get home from work and the gym dinner is prepared. In the summer, I feel like using the crockpot is a little more tricky, but balancing this blog and a full time job takes a lot of work, so easy meals and relaxation are a necessity in my life. One weekend I picked up some Palm Breeze during my grocery trip on a whim. I’m not usually a fruity drink person, but it looked refreshing and since it was 100+ degrees out, I thought, “hey, why not.” Aaron actually ended up loving them and drank 4 of the 6 in the pack. Anyway, Palm Breeze comes in two tropical flavors, Ruby Red Citrus and Pineapple Mandarin Orange and when I picked up the pineapple, it sparked my creative juices to make a summer crockpot meal featuring…you guessed it….pineapple! The perfect pairing! I searched around for some recipes online, and found this one which I changed up quite a bit. First, I didn’t put potatoes in mine and I nixed the coconut milk all together. I actually substituted the coconut milk for some chicken broth and skipped the ginger root. I did use my jerk seasoning, and added a few cayenne pepper splashes. Basically my recipe looked something like this:
- 2 chicken breasts
- 1/2 cup chicken broth
- 1 tbsp cayenne
- 3 tbsp jerk seasoning
- cilantro to taste
- salt and pepper (as much or as little as you’d like)
- 2 cups fresh pineapple
- 2 limes
We paired our dinner with the Palm Breeze drink and served it over rice. It was one of those easy, perfect summer meals that we will definitely be having again or would be perfect for a summer BBQ as an additional entree. The pineapple in the meal and the Pineapple Mandarin Orange Palm Breeze drink were perfect compliments of each other and we’ve picked up the other flavors since.
Also, I don’t know if you’ve used them, but these liners save my life. You can pick them up at the grocery and it means no more scrubbing and scrapping your pots to get them clean. You just pick them up and throw them away and rinse out the pot. Love them!
