NC has been a little wonky. The mornings are cool and breezy just like fall,
but by 12pm it’s in the mid 80s. I am craving some consistency (preferably fall
consistency), but in the meantime, I’m incorporating fall traditions into my
days in other forms. Enter this amazing Apple Cider Moscow Mule. The perfect
amount of fall and ginger mixed into an adorable little copper mug (cups here). If you’ve never had a Moscow Mule and like ginger beer, I suggest you try one. My girlfriend Misti introduced them to me about two years ago and they are easily one of my favorite cocktails. So, when I found this version that adds a little fall, I knew I had to test it out.

I switched up the recipe I found slightly to use what I had on hand. I used Pinnacle® Original instead of ginger infused vodka and instead, grated some fresh ginger in the bottom of the mug before beginning the cocktail mixture. I had picked up some regular apple cider, so I used that to start. I also only used 3 ounces of vodka and from there, just taste tested until I liked the consistency of the mixture. Pinnacle is so smooth, so you can’t go wrong using the Original! Don’t forget a lot of ice either, it should be cold and refreshing!
Have you ever had a Moscow Mule? I never thought of adding apple cider to it, but I love the twist on the classic drink. Also, for those who don’t know, Ginger Beer is actually not alcoholic- you can usually find it at Target and other stores in the soda section. The name is quite deceiving!
