We’ve been on a salad kick lately, but we’re always looking for ways to switch them up from tasting bland and boring. If you’re not a fan of red meat, I apologize in advance for this post, but still urge you to keep reading for the Horseradish dressing that’s both creamy and delicious! Plus, it would be just as good with some grilled chicken! Pair it with some Crios wine and you’ve got a complete dinner in less than 25 minutes.
I honestly didn’t follow any particular recipe for the salad part, I kind of just throw in what we have. I will be the first to admit that we buy the pre-mixed greens in a bin from the grocery, so I literally tossed that on a plate and looked to see what we had for toppings in the fridge. For ours I used goat cheese, cherry tomatoes, pepper and avocado. Then I topped it with balsamic glaze (which I top everything with because it’s just amazing). You can find glaze near the dressing/olive oil section at your grocery store. It’s soo good on everything- meats, fruit, cheese, etc. As for the dressing, I used this recipe, and as I said above, it was delicious and creamy. It did make a ton, so next time I would probably cut the recipe in half!
Literally pile everything together and voila, dinner is served. I accompanied ours with a glass of Crios Malbec. Ever since we attended a wine party last year, Aaron has taken a liking to Spanish wine, so I always pick a bottle up during our weekly shopping trip. While the wine was delicious, I also love that Crios is a family-owned brand by Susana Balbo- she was the first enologist in Argentina and started the business in honor of her son and daughter. Talk about some girl power!
Crios is harvested from specific areas in Mendoza and Salta in Argentina and I love that each wine carries an inspirational message that also represents either a milestone in Susana’s personal and professional life or the story about how the wine was made. Doesn’t everything seem a little more interesting when a back story is given? I think so. This Malbec’s message is Trust in Yourself. I have to admit, I often need to do that, but I did trust in myself for this recipe and I have to admit it turned out pretty delicious!

Horseradish is so delicious, and we never thought of making it into a delicious sauce for salads, what a great idea! The spiciness helps boost your metabolism too, will definitely be trying this soon!
