I know this isn’t a “fitness” post per say, but Rachel and I thought it would be great to start sharing healthy recipes, our favorite workout gear, etc. in lieu of workouts for some Fitness Thursday posts. So many people think exercising is the only way to lose weight and reach goals, but the truth of the matter is that diet is actually 80% of it (and having a cute outfit to work out in doesn’t hurt either!).
I almost feel silly sharing this recipe because it’s so easy, but who doesn’t love easy? As someone who feel like their lucky to remember deodorant in the morning, I’ll take easy! These Baked Egg Cups take about 15 minutes to make and you can easily prep 6-12 and put them in a plastic container for the week.
What you Need:
- Eggs (6-12 depending)
- Cheese, chopped veggies (or other toppings)
- Muffin Pan
- A meat to act as the “cup”. In this case, we used peppered ham.
- PAM or spray oil (I used coconut)
Simply place the ham in the muffin pan with the sides above the dip of the pan. The next step you can do one of two ways. If you’re not a fan of sunny side up, scramble eggs before placing them in the muffin tins. But, if you do like sunny side up, crack and egg in each of the muffin sections. DO NOT fill your veggies before placing the eggs in the areas because your eggs wont fit (I made this mistake). Once your eggs are in the individual areas, you can top with whatever veggies you like, or even a bit of cheese. Once everything is situated, bake for 10-15 minutes (depending on if you like the yolk runny) at 350 degrees. Voila!
I cover everything in hot sauce, so if that’s your forte too, it’s delicious. I am always looking for healthy/quick recipes for busy on the go mornings before work. For me, granola bars just don’t cut it! Do you have any quick or healthy breakfast ideas? Tell me!
Aaron is not a breakfast guy (he’s crazy), so I am usually just cooking it for myself unless his is covered in meat and super hearty! No Benedict for him! But pass the hollendaise over here!

My hubs doesn’t do breakfast either (accept bacon). So weird!! I’ll be enjoying eggs and he’s eating pasta from the night before ๐
