Today I’m back with a Fitness Thursday recipe post. Rachel introduced me to these flourless mini muffins a few weeks ago, and I was hooked. You probably didn’t look at these muffins and think “wow, those look like the most delicious, amazing things I’ve ever had.” But, I beg to differ, sure, they aren’t much to look at, but I may or may not have eaten a whole batch over the course of two days. They are made with zero calorie, all natural sweetener, pumpkin puree and no flour…so a whole batch isn’t terrible right (insert big embarrassed emoji face). The best part about this recipe is that they are easy and a quick grab for a 2pm sweet craving.
Here is what you need:
- 8 oz. All Natural Peanut Butter
- 8oz Canned Pumpkin Puree
- 2 tbsp unsweetend cocoa powder
- 1 tsp vanilla extract
- 1 egg
- 1 tsp baking soda
- 1/4 cup granulated stevia in the raw
- chocolate chips (optional)
All you need to do is preheat oven to 350 degrees, mix ingredients together and pop in the oven for 10-15 minutes. Note, these are mini muffins, but you could definitely make these in a regular sized muffin pan, just plan accordingly. Each muffin has about 70 calories, but are more fulfilling than a simple piece of candy. Two is the perfect mid day snack (if you can stop after two..again #noselfcontrol).
I do recommend using a coconut oil spray to heavily spray your baking pan so they pop right out once taken from the oven. Also, I baked mine for about 12 minutes. It looked like they needed a minute or two more, but I’m glad I pulled them when I did so they were a little more moist and chewy. If you have a sweet tooth like I do, these were the perfect fix for me and I don’t feel like I’m dying from sweet withdrawal.
I’ve never made any type of baked good flourless, so I was surprised by how much I enjoyed them (Aaron did too!). They have become a weekly staple in our house, but only last a few days usually.
