So Aaron is not a fan of “substitutions” or cutting out one dietary group, so when Rachel recommended this recipe for 5 Ingredient Garlic Mashed Cauliflower, I was hesitant. However, the moment I tried it, I knew Aaron wouldn’t complain because it was delicious. Plus it has cheese, what’s not to like? I’m almost embarrassed to share it with y’all because it’s THAT easy, but I always appreciate an easy recipe, so I figure you do too. We made a huge batch that lasted as a side for three days, so it’s great if you’re meal prepping!
Ingredients:
1 head fresh cauliflower
¼ cup sour cream
½ block of cheddar cheese
½ tbsp minced garlic
Salt and pepper to taste
Note: we did not use exact measurements for this recipe. The amounts listed here are an approximation of what we used and may vary for you depending on your preferences.
Directions:
- Bring a pot of water to a boil on the stove. While water is boiling, cut the cauliflower into chunks (removing the stem and leaves). Place all cauliflower in the water to cook until soft.
- Once cauliflower falls apart at the touch of a fork, drain, and place in a food processor.
- Add sour cream, cheese, garlic, salt and pepper and combine all ingredients together.
- Taste and add additional cheese, garlic, salt and pepper to taste. 🙂
- Serve next to your favorite grilled meat! Yum!
If you’re a cheese/cauliflower person -try it. Or better yet, make your naysayer husbands believers.

I love mashed cauliflower but I rarely think to make it! I’ve always used a potato masher but I like the food processor idea.
