Who likes fries? ME ME ME! Who can’t fit in her pants? ME ME ME! 🙂
This recipe brings together two of my favorite things: ranch and fries. Aaron and I joke, when from Ohio, you dip everything in ranch…whelp, it’s true (for me at least because ranch makes everything better, duh). But, the best part about this zucchini fries recipe, they already taste like ranch thanks to a handy seasoning packet (but don’t worry, you can still dip them in ranch like I did…no judgement).
Anyway, these are SO good, maybe not 100% good like French fries if I’m being honest; but I swear when my husband eats ALL of them, I’d say 95%! And that’s what happened…two zucchinis done-zo! Here’s how to trick yourself:
Zucchini Fries Recipe:
Here’s what you need:
-two zucchinis
-one ranch packet
-panko (1 cup)
-1 teaspoon water
-1 egg
Here’s what you do:
-Mix ranch packet with 1 cup panko. Mix 1 tablespoon water and egg.
-Slice zucchini fries to desired length/width (I did 1/8th per half). Cut as thin as possible.
-Dip zucchini in egg/water then panko/ranch mixture. Lay on baking pan.
-Bake for 10 minutes at 350 degrees then broil for 2 minutes to brown.
After I shot these I served them for dinner and of course Aaron’s first reaction was “ew.” Then as mentioned above once he actually tried them, they were gone in a matter of minutes. They were a great side to our turkey burgers and they just feel very light for summer which is great because….bikinis. ick. I’m looking forward to making these again when we have a kitchen, belongings, etc….. <le sigh>.
