I have high hopes that at some point in this lifetime, I’ll be a Martha Stewart experienced chef, baker, home decorator and mother-type (minus the whole prison sentence thing), but until then, I’m a mom to a demanding toddler trying to operate a house and business with little childcare weekly. Because of this, I am not opposed to sometimes taking short cuts if the end result is joy rendering. Thus enter my 5-Step Hand Pies. Like most women trying to achieve perfection in all aspects, I found a recipe in my Better Homes and Garden Magazine for the “real things,” but was quickly reminded that sometimes I simply don’t want to use nap time as baking time. So, enter my short cut. I made these and Aaron thought they were delicious and he proceeded to chat about them throughout the course of two days (and many eaten hand pies). I’m sure the homemade from start to finish are just, or even more tasty, but for the women out these that like to bake with little effort, or simply create something adorable (I might make these for a bridal shower I have at the house soon), this is a great hand pie recipe for you.
And yes, I had these ready for Valentine’s Day, but again…life, so here they re the week after, but remember you can cut them into any shape you wish!
Hand Pie Recipe:
Here is what you need:
- Two Frozen Pie Crusts (the kind that you roll and put into your own baking dish)
- Choice of filling (we used raspberry preserves made by my grandmother
- Ingredients for Frosting:
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
- 5 tablespoons milk
- 8 oz. cream cheese
- 1 egg white
Instructions:
- Roll out pie crusts and begin cutting shapes as desired. You can then ball pie crust and re-roll out for additional cuts.
- Line baking sheets with cutouts (I use this which is a lifesaver), but if not grease your sheet first.
- Put a tablespoon of preserve of filling of choice in center leaving room around edges. Top the bottom cutout and preserves with cutout on top and use egg white to “seal” pie. Then, take a fork and press around the outer rim of shape to prevent leaking of preserves.
- With a pastry brush, brush egg whites on top to create browning once cooking. Bake pies for 15 minutes or until golden brown at 400 degrees.
- While pies bake, make icing.
- Combine powdered sugar, butter, cream cheese and vanilla and beat until smooth.
- Add additional milk if too thick (be careful not to add too much!)
Once pies are done baking, leave to cool and then drizzle icing as you wish! Voila, so easy and delicious. Perfect for breakfast, brunch or as a dessert!
