You guys I love soup season. Like, A LOT. I love throwing ingredients into a crockpot and letting it do the work for dinner time. It’s such a life win.
I always order butternut squash soup when we go out, so I really wanted to perfect an at home recipe and this one is pretty good and very easy! This slow cooker butternut squash soup is the perfect amount of creamy, with a touch of sweetness balanced by the seasoning to give it zest and flavor. This is also a great option for dairy, vegan and Gluten free people!
EASY SLOW COOKER BUTTERNUT SQUASH SOUP RECIPE
Ingredients:
- One medium (or three bags pre-cut from Trader Joes, which is so much easier) butternut squash
- One can coconut milk (regular, do not use unsweetened)
- One half yellow onion diced (you could also sauté before for added flavor, but I did not)
- One large apple peeled and diced
- Two large Carrots peeled and diced
- 3 Cups Vegetable Broth
- Add two Bay Leaves (remove before mixing)
- The following items. Use will vary depending on taste preferences. I use a pinch at first and as the day goes on, add what I need more of (flavor, spice, etc.)
- Cayenne (generous, I like mine spicy)
- Salt and Pepper (generous)
- Garlic (1 tablespoon)
- Cinnamon (1 teaspoon to start)
- Ground Ginger (1 teaspoon to start)
- Garnishes (I used Pumpkin Seeds, Thyme and Sour Cream)
Instructions:
- Add all ingredients to crockpot and cook on high for 4 hours, or low for 8 hours.
- Remove Bay Leaves
- Use blender or immersion blender to blend until smooth before serving.
Note: Before serving after your slow cooker butternut squash soup has been blended, taste and add additional spices as needed. I like mine with some spice, so I added additional cayenne pepper and blended, but if you’re more a sweet person, you could add Cinnamon, etc.
This soup is SO easy, healthy and perfect for a cold winter’s evening! We had toasted Pumpkin Seeds left from Halloween, so I sprinkled some on top with Thyme and a swirl of Sour Cream! So good!
I’ll be having this slow cooker butternut squash soup for lunch, but first for this morning, coffee. 🙂
