When we lived in North Carolina, I became OBSESSED with jalapeno pimento cheese. It’s an appetizer on almost every menu and I love how each recipe tastes a little different. One though, was/is my absolute favorite and was a staple item in our fridge every week that we lived there. I actually was doing some research and apparently, “Palmetto Cheese” is from South Carolina’s low country, so South Carolina has my vote when it comes to making the best pimento.
Sadly, while I’ve lucked out on finding my favorite Palmetto Cheese a few times here in Ohio at Kroger, I decided I needed to just make my own and test the waters. The best part is that it’s so easy and perfect for summer. It’s not 100% spot on to my all time favorite, but it’s pretty close and Aaron actually said he prefers this version. I love adding jalapeños to contrast against the savory cheese and sweetness of the cream cheese. The end result is delicious and a new go-to for our refrigerator.
Jalapeno Pimento Cheese
Items Needed:
- Jalapeños
- 1 bag Sharp Cheddar Cheese
- 1/2 Block Cream Cheese softened
- 2 TSP Lemon Juice or as desired
- 1 Small Jar Pimentos, diced
- Fresh Garlic, 1 TSP
- 2 TSP Diced Onion
- Garlic Powder to taste
- 2/3 Cup Mayo
- Salt and Pepper to taste
Directions:
- Remove seed from jalapeños, dice small. Wash hands thoroughly.
- Mix all ingredients in bowl until combined. Season with salt and pepper as desired.
So easy! I like to serve ours with veggies, pork rinds (or crackers), and my actual favorite is pickles. So good (and no, I’m no pregnant), it’s just a great combo!
Voila! Maybe I’ll have pimento cheese for breakfast. But first, coffee!
