Hi friends! Happy Friday, I’m slowing getting back into my normal posting schedule after taking last week off to educate myself more on social injustice (I’ll continue to share more as I learn more, but you can see some children’s books I recommend here) and trying to cope with my dad being in the hospital (he’s slowly getting better, thank you for all your prayers!). Anyway, I just shot a TON of new content and I’m so excited to share it with y’all!
We recently hooked up our new Traeger Grill (more on that later) and whipped up this DELICIOUS grilled romaine salad with homemade dressing. They’re so easy and while we had them as a side, you could easily throw some grilled chicken or shrimp on top and make them a full meal. I love those easy summer meals that don’t take too long but taste delicious, don’t you?
Grilled Romaine Salad
Here is what you need:
- Romaine Lettuce
- Croutons
- Tomatoes
- 1 egg
- 1 minced garlic cloves
- 2 tablespoons freshly lemon juice
- 1 teaspoon Dijon mustard
- 1/2 cup freshly grated Parmigiano-Reggiano
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- Olive Oil (2 tbs for salad)
For the Salad:
- Chop romaine lettuce lengthwise in halves.
- Brush olive oil on each side and sprinkle with salt and pepper.
- Grill cut side face down for five minutes and then turn and grill other side 2-3 minutes until brown and crispy (lettuce should look a little wilted).
- Top with parmesan cheese, dressing, tomatoes and pepper.
Dressing:
- Mix egg, dijon, lemon juice, parmesan cheese, garlic, olive oil and salt and pepper into mixing bowl until desired taste achieved. Spread generously over lettuce and serve!
- That’s it!
Literally so easy my friends! Now I’m craving it for dinner tonight with our salmon!
