How was everyone’s weekend and Father’s Day? We went to go visit my dad and then spent Sunday with Aaron’s brother’s family and my Mother-in-Law. Overall, low key (much like COVID-19 era), but nice. Anywho…
I’m not much of a cocktail drinker, I stick to beer and wine pretty typically, but every once in awhile, I’ll have a martini, etc. A few weeks ago, we had a virtual happy hour with our friends in Cleveland and we each picked a drink to have on hand and make during out chat. Our friends picked a spicy margarita and we picked an Old Cuban and oh, em, gee… I became and instant fan. This rum cocktail is refreshing using fresh mint and would be perfect for evening drinks on the patio while watching your kiddos play (or let’s be honest, for after bedtime). I know the ingredient list seems extensive, but we found we had almost everything on hand (we grow fresh mint in our garden).
Old Cuban Rum Cocktail
Here is what you need:
- 4-6 Fresh Mint Leaves – We used about 2-2.5 per two cocktails
- Simple Syrup or Sugar Cube
- White rum Lime Juice
- Champagne
- Bitters
Here is what you do (will make two drinks):
- In mixing glass, muddle sugar cube (or 1 oz. simple syrup), 3 mint leaves and lime juice.
- In cocktail shaker, pour in 3oz. white rum and 2 dashes of bitters over ice and shake!
- Strain into desired glass and top with splash of champagne.
- Garnish with mint leaf and enjoy!
You can see in ours, there are tiny little dots of mint leaf from being muddled in the mixing glass which means every sip has the perfect balance of mint. Personally, the colder the better in this cocktail which makes it the perfect summer sip for your Friday evening! I’d love to know if you’ve ever tried one! If you have any great summer cocktails you love, send them my way!
But since it’s Monday morning, it’s not time cocktail time, more like coffee time.
