Even though we moved back from the South, I still love a delicious Southern dish and often still order them off menus when we happen upon them; shrimp and Grits, Pimento Cheese (my recipe here), Fried Chicken, Fried anything really…okay, now I’m hungry.
We were at the Farmer’s Market down the street a couple weeks ago and I was suddenly taken back to North Carolina when I spotted some green tomatoes at a stand. I told Aaron I was getting some to “fry on up!” I like to pretend I’m a Southern belle sometimes, I sadly am not. Putting these fried green tomatoes together maybe takes 15 minutes and is so easy and so, so good. Perfect for summer grill outs!
Fried Green Tomatoes with Goat Cheese Whip
Here is what you need:
- 1-2 large green tomatoes
- salt and pepper
- garlic salt
- flour
- 2 eggs
- vegetable oil for frying
- lemon
- log of goat cheese
- fresh basil
- milk (two tbsp)
- bread crumbs
Here is what you do:
- Heat pan with layer of oil over medium heat
- Place 2 cups flour in bowl, 2 eggs in separate bowl and bread crumbs in a third bowl. I added salt and pepper to the flour bowl, as well as some shakes of garlic powder.
- Thinly slice tomatoes and one by one dredge tomato into egg mixture, then flour then bread crumbs until coated.
- Repeat dredging until all tomatoes are coated with egg/flour/bread crumb mixture.
- Once oil is hot, please tomatoes down on one side and fry until brown on one side, then flip (about 1 min each side). Once fried on both sides, place on paper towel to cool.
- Once tomatoes have been fried, place the goat cheese in a bowl, add a dollop of milk, the juice of one lemon, and some pepper. Mix, mix, mix until blended. Season according to taste.
- Cut strips of fresh basil.
- Top Fried Green Tomato with dollop of goat cheese whip, fresh basil and some pepper. VOILA!
- Enjoy
We had our fried green tomatoes with ribs and a salad, but these would pair well with almost anything! Have you ever had Fried Green Tomatoes Benedict? Yes please! Another option would be to forgo the whipped goat cheese and top these with my Jalepeno Pimento Cheese mixture! Yum.
Now go forth and fry up something delicious, with a big cup of coffee of course!
