Ever since social distancing started, I’ve been trying new recipes. I think mostly I am just tired of the same ole’ take out options, but it’s also kind of an escape from the world to create something new and delicious. These easy apple turnovers were so good and they’d be perfect for Thanksgiving or Christmas morning. Something about good food makes me forget that we’re in the middle of a global pandemic for a little while. Even if your holiday plans have changed, you could whip up one batch of these for your immediate family and it would be something to enjoy doing together.
Easy Apple Turnovers
Here is what you need:
- One Can Puff Pastry (2 sheets)
- 2 small sliced apples (I used Honey Crisp)
- 1 Teaspoon Cinnamon
- 1 Tablespoon Brown Sugar
- 1 Tablespoon Lemon Juice
- 1 Large Egg
- 1 Cup Powdered Sugar
- 1/4 cup whipping cream
Here is what you do:
- Preheat oven to 400
- In large bowl, combine Cinnamon, Brown Sugar, Lemon Juice and apples. Cook over medium heat until apples start to soften.
- Unfold the pastry sheets and roll out perforations and cut each sheet into four squares. On a lined baking sheet, fill the puff pastry square with apple mixture.
- Fold square over into a triangle and using a fork, pinch ends together. Brush egg whites on outer triangles and cut two slices in puff pastry for venting.
- Bake at 400 degrees for 16-18 minutes or until puff pastry is puffed and golden brown.
- For icing, in large bowl combine powdered sugar and whipping cream. Stir together until desired consistency. If too runny, add more sugar. If too thick, add more whipping cream.
- Drizzle over warm turnovers and serve.
- Enjoy!
I love pastries so these will definitely be breakfast for Thanksgiving. Aaron works nights this year and because of social distancing and his schedule, it will just be the three of us (and my mother-in-law) for Thanksgiving. So, instead of cooking dinner, I think we’re ordering a Thanksgiving feast out and I’ll just set a pretty table. 🙂 It’s just a lot to cook for three adults, but breakfast for the morning, now that I can handle alone.
