Okay, I know we’re all about to be inundated with Thanksgiving deliciousness leftovers, but just in case you need an easy dinner to throw together later this weekend, I thought I’d share this easy but delicious homemade chicken noodle soup. Hey, maybe you could substitute chicken for turkey with the noodles?! Anyway, I know you’re probably prepping for your big Thanksgiving feasts, so I’ll go ahead and get down to it. 🙂 As always, make sure to Pin this to your boards so you can come back and find it later, it really is So delicious and perfect for the upcoming cold weather.
Homemade Chicken Noodle Soup
Here is what you need:Â
- 2 Chicken Breasts
- Salt and Pepper to taste
- 1 small onion
- 1 garlic glove minced
- 4 celery stalks, chopped
- 10 cups chicken broth
- 4 medium carrots
- 1 teaspoon fresh thyme
- 3 cups egg noodle
- 1 teaspoon fresh parsley
- 1 tablespoon lemon juice
Here is what you do:
- Cook chicken thoroughly in pan with salt and pepper and olive oil. Once chicken is cooked thoroughly, remove and set aside.
- Using the same pan, add garlic and onion and cook for roughly 5 minutes, scraping brown bits into mixture from pan.
- In a large stockpot, transfer garlic and onion mixture and add the chicken broth. Add carrots, celery and salt and pepper. Bring to boil.
- Dice chicken and add to the soup mixture along with fresh herbs and lemon juice. Simmer on medium to low heat for 20-25 minutes.
- Turn temperature down on the soup mixture and add egg noodles. Simmer on low until noodles are cooked thoroughly.
- Top with salt and pepper and additional herbs as desired. Serve with crackers or bread.
- *Note: I like to add a dash of hot sauce to mine.
