When I was a little girl, I loved drinking coffee. I would spend countless hours each week at my grandpa’s house and he would always let me have a little bit while he drank his. Of course, being a child I would drown my coffee with sugar and milk making it taste like perfection. Perhaps coffee truly does stunt your growth and that’s why I’m only 5’2 now. Anyway, my fondest memories are spending my days at his house, sipping coffee on the porch while my grandma made delicious baked goods and brought them out to us on the porch. Occasionally I would help her and we would use the most interesting ingredients to make items that later tasted like heaven. Some of my favorites were any baked goods made with zucchini. All of my life I have been a huge fan of zucchini baked goods; cookies, bread, you name it. So today, I wanted to try to recreate the zucchini cookies she made and I am contacting her this week to get her zucchini bread recipe which I can’t wait to share with y’all soon. SO GOOD.
With that said, I am a huge coffee + dessert person. I just think a cup of espresso or coffee pairs so well with cookies, scones, etc. Aaron is not a coffee drinker, but he’s always dipping items into my morning coffee. While during the week I typically drink my coffee black, I always look forward to my creamer on the weekend. I love that Coffee-mate has a variety of flavors and lately I’ve been nabbing Toll House Chocolate Chip. It’s amazingly delicious and I knew instantly it would pair well with these cookies (considering they use Toll House Chocolate Chips). I used this recipe, but switched up a few things due to what I had in my baking basket. For one, I left out the nuts. I also used half whole wheat flour and half white. I should also note, the recipe yields a huge batch of cookies! I half it and it’s much more manageable for two people (and also so my pants still fit!).
Paired with my coffee and Coffee-mate, these cookies are amazing, these cookies are amazing. I also like to think they are a little healthier since they have zucchini in them! I’m going to contact my grandma this week and see if she can give me her recipe for the bread which I’ll also share, you definitely want to make it if you like zucchini bread.

I absolutely love this recipe! Thanks for sharing it! I love cookies and zucchini so this is just perfect 🙂 My mom and I have also made zucchini banana bread and brownies – they are absolutely to die for! I might have to put the recipes up on my blog XD! I can't wait to try these babies out – yummy!
